30 Minute Healthy Turkey Chili
WHAT YOU’LL NEED
1 tablespoon oil
1 pound Jennie-O Extra Lean Ground Turkey
¼ teaspoon salt
¼ teaspoon pepper
15 ounce can white kidney beans (drained and rinsed)
11 ounce can white corn (drained)
4 ounce can chopped green chiles
½ cup salsa
2 teaspoons ground chili powder
¼ teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon ground cumin
4 cups chicken broth
½ cup water
¼ cup masa harina (corn flour)
Topping Options: Fresh cilantro, fresh lime, avocado, tortilla chips, sour cream
HOW TO MAKE IT
In a large pot, heat oil over medium high heat until shimmering. Add Jennie-O Ground Turkey and break into small pieces with a wooden spoon. Season with salt and pepper. Cook until no longer pink, about 3-4 minutes.
Add beans, corn, chiles, salsa, spices and chicken broth to the pot. Stir to combine.
In a small bowl, mix water and corn flour together until smooth slurry is formed. Stir the corn flour slurry into the turkey chili, then bring to a boil. Cover, and turn the heat down to low so the chili will simmer gently for 20 minutes or longer.
Add additional salt and pepper to taste. Add toppings and enjoy!
